Sugar Free Vegan Banana Muffins


Happy New Year! While I am not big on New Year's resolutions, I did make two. One is to stop spending so much time on Facebook. It's lame. The second is to eat less processed food. So, that means a lot less sugar and packaged food. Therefore, I made these no sugar added, whole wheat, low fat muffins! They are super easy to make. They're not super sweet and you can taste how good they are for you! They are quite satisfying. I'm not giving up baking with sugar, vegan, butter and all that good stuff completely. But, I'm trying to make a small change. We'll see what other stuff I come up with. Anyway, here's to a happy, healthy New Year!

What you need:

3 ripe bananas, mashed
1 cup unsweetened applesauce
3/4 cup whole wheat flour
1/4 cup flax meal
1/2 cup oats
 1 tsp baking powder
1 tsp baking soda
1/2 cup oats

 What to do:

In a small bowl, mash the bananas with a fork. Mix in the applesauce.
In a large bowl mix all of the dry ingredients. Then, stir in the banana and applesauce mix.
Fill the muffin pan about 3/4ths of the way full.
Bake for about 15-20 minutes.
