Vegan White Chocolate Macadamia Nut Blondies!
I miss white chocolate. I will admit that is one thing that I miss, being vegan. There are usually vegan substitutes that satisfy my cravings...like vegan chocolate and cashew cheese. Yet, white chocolate is hard to find. I found a great recipe recently and tried to make it. It turned out well! Although, my friend told me it didn't taste like white chocolate but she said it was good! Anyway, I love blondies. This recipe turned out great, I couldn't stop eating them!
What you need:
1/2 cup vegan butter at room temperature
1 1/4 cup sugar (I used brown sugar)
Egg replacer equivalent of 2 eggs
2 teaspoons vanilla extract
1 1/2 cups flour
1 teaspoon baking powder
1 cup vegan white chocolate (http://bittersweetblog.wordpress.com/2008/02/18/the-white-stuff/)
1 cup semi-sweet vegan chocolate
3/4 cup macadamia nuts, chopped
What to do:
Preheat the oven to 350 degrees
In a large mixing bowl, cream together the butter and sugar. Add egg replacer and vanilla. In a separate bowl sift together the flour and baking powder. Mix until incorporated. Mix in chocolate and macadamia nuts.
Pour into a baking pan an smooth flat. Bake for 20 to 30 minutes.

Pumpkin Swirl Brownies.
I took a bite right before I took the picture! I couldn't resist...
Baking is one of my absolute most favorite things to do and it always makes me feel better when I'm having a less than perfect day. Today was one of those so baking was a must! I decided to keep with the pumpkin vibe since it's still fall and Thanksgiving is only 4 days away! I've been seeing recipes around for pumpkin brownie's and I couldn't resist creating my own! These came out super fudgy and delicious and absolutely made my day better...These are a must to try.
Ingredients:
1/2 cup vegan butter
2 ounces dark chocolate
3/4 cup sugar
2 eggs (2 tablespoons flax meal + 4 tablespoons water)
3/4 cup whole wheat flour
1/2 cup pumpkin puree
1/2 cup sugar
1/4 cup whole wheat flour
What to do:
Preheat oven to 350 degrees.
In a medium sauce pan, melt together butter and dark chocolate.
Once melted, remove from heat and stir in sugar, flax mix, and flour.
In a separate bowl, mix together pumpkin puree, sugar, and flour.
In a 9X9 greased baking pan, evenly spread out the brownie mix. Spread out the pumpkin mix on top and swirl in with a butter knife.
Bake for about 30 minutes and ENJOY!
So good with vanilla ice cream!

Vegan Almond Butter Swirl Brownies
I have finally made brownies that are delicious! I broke my my curse of making bad brownies (hopefully)! These are pretty easy to make and they are delicious, especially if you have a weakness for almond butter.
Brownie Recipe:
3 tablespoons vegan butter
3 tablespoons water
3/4 cup packed brown sugar
1/2 cup cocoa powder
1 teaspoon vanilla extract
1/4 cup water
1 tablepsoon ground flax meal
1 tablespoon egg replacer powder
1/2 cup whole wheat flour
1/2 teaspoon baking powder
Almond Butter Swirl:
1/2 cup almond milk
1/3 cup sugar or brown sugar
2 teaspoon energy egg replacer + 2 teaspoons water
1 teaspoon almond milk
1/2 teaspoon vanilla extract
What to do:
Preheat oven to 350 degrees.
In a small sauce pan melt butter. Mix in water, sugar, cocoa powder, and vanilla. Remove from heat.
Ina separate bowl whisk together flax meal, water, and egg replacer powder.
Whisk into chocolate mix.
Whisk in the flour and baking powder.
For the almond butter swirl: Mix all of the ingredients together.
In a lightly greased 8" square baking pan evenly spread out chocolate mix. (It will be a very thin layer, don't worry!)
Put chunks of almond butter on top of the chocolate layer.
Swirl around with a knife.
Bake for about 25 minutes.

Brownies!
I cannot bake brownies for the life of me and I can barely make boxed brownies. So, I knew I would fail somehow, someway with these brownies. I did but in a good way! They are crumbly and don't stick together to well. But, they are delicious and it's like being in ooey gooey crumbly brownie heaven.I still won't give up on brownies and if I ever perfect them I will share. But for now, these are delicious and perfectly imperfect.
What you need:
8 ounces vegan dark chocolate
3/4 cup vegan butter
Egg replacer equivalent to 2 eggs
1/2 cup sugar
1 teaspoon vanilla extract
3/4 cup flour
1/2 cup semi sweet vegan chocolate chips
1/2 cup chopped walnuts (optional)
What to do:
Preheat oven to 350 degrees Fahrenheit and lightly grease a baking pan.
Chop up the 8 ounces dark chocolate and melt into a double boiler. Then, melt the butter into the melted chocolate. Remove from the heat and let cool for about 5 minutes.
With an electric mixer, beat in egg replacer, sugar, and vanilla. Add in the melted chocolate and butter mixture.
Mix in the flour and then stir in the chocolate chips and walnuts.
Bake for 20 minutes or until a toothpick comes out clean!
